Not all salads involve boring iceberg lettuce leaves! This green lentil and pea salad is packed with plant-based protein and has lots of healthy fats from the pumpkin seeds and avocado.
It’s such a super quick vegan protein rich meal to prepare and the avocado and hummus give a creamy texture to the dish. You can either cook the peas from frozen or sit them out to defrost for a sweeter, juicier addition to the salad. This salad will definitely leave you full up and nourished!
Green Lentil and Pea Salad
Ingredients
1 cup frozen peas
1/2 tin green lentils
1/2 small avocado
1 tbsp pumpkin seeds
1 tbsp hummus
black pepper, to taste
Method
- Cook the frozen peas for a few minutes, avoiding overcooking/boiling. Alternatively leave out to defrost and add raw to the salad.
- Rinse and drain the tin of green lentils, then add the lentils to a bowl along with the peas and stir together.
- Add the sliced avocado and top with hummus and pumpkin seeds. Grind some black pepper on top to taste.
