These chickpea and almond burgers make a great meat free, cruelty free burger.
Plus they’re gluten free as the recipe uses almond flour (ground almonds) to bind the mixture together. Of course, you can always use any other flour you have, but you may want to use less if using plain flour.
The grated carrot also acts as a binder and adds moisture preventing the burger mixture from being too dry.
With just eight ingredients, it takes no time at all to make these vegan chickpea and almond burgers.
High in fibre, with healthy fats including omega 3 from the flaxseed, these are super quick and easy to make.
A true happy meal, unlike your standard meat burger with added salt and who knows what else!
Serve them with my sweet potato wedges (recipe here) to add an extra serving of veggies to your already healthy plant-based burger.
Chickpea and Almond Burgers
Serves: 4
Ingredients
1 can/400g chickpeas, drained and rinsed
1 carrot, grated
1 cup ground flaxseed
½ cup ground almonds
½ cup coriander, chopped
½ red onion, chopped
1-2 cloves garlic, crushed
1 tsp cayenne pepper or crushed chilli flakes
Method
- Put all of the ingredients into a food processor and blend until the mixture becomes a paste.
- Divide the mixture into 4 portions and form burger shaped patties using your hands. Alternatively roll or press the mixture flat and use a cutter to cut into neat round patties.
- Pan sear them on a low heat for 5-7 minutes on each side until golden brown.
- Serve with sweet potato wedges and salad, or in a bun stacked with salad, avocado and hummus.
